Carrot Cake

Sometimes we find ourselves in a need of a dessert. But we need something special. Carrot Cake!


Preparation time – 60 minutes

Cook time – 50 minutes


Grate and strain the carrots. Set juices aside. Combine grated carrots and brown sugar, add 2 teaspoons of carrot juices to the mixture and leave it for 45 minutes, then add raisins.


Preheat oven to 350 degrees F (176 C). Take two 10-inch cake pans and grease them. Then flour them.


Take a big bowl and beat eggs. Whisk in oil, vanilla and sugar. Add pineapple, baking soda, flour, walnuts and cinnamon. Mix it until it is well mixed. Add carrot mixture and mix it again. Pour dough into two cake pans.


Place cake pans in a preheated oven and bake them for 50 minutes.

  • 3 cups all-purpose flour
  • 3/4 cup vegetable oil
  • 4 teaspoons ground cinnamon
  • 1 cup crushed pineapple (drained)
  • 6 cups grated carrots
  • 4 eggs
  • 1 teaspoon salt
  • 1 cup raisins
  • 1 1/2 cups white sugar
  • 2 teaspoons vanilla extract
  • 1 cup brown sugar
  • 1 cup chopped walnuts
  • 1 1/2 teaspoons baking soda
